When Central America is discussed among roasters one generally first thinks of Costa Rica or Guatemalan coffees and indeed many coffees from these 2 countries are fantastic, with Guatemalan coffees, especially from the Antigua region considered to have splendid spicy profiles and Costa Rica coffees seem to be the standard for a clean, rich, bright cup. But other South American coffees are great as well and should not be overlooked. For instance, El Salvador produces some vibrantly rich flavored coffees. Some excellent coffees come from Nicaragua as well. While Honduras coffees are generally considered a milder sweet coffee ‘and there is nothing wrong with mild and sweet’ some of the excellent Nicaraguan coffees feature a some of the sweet notes similar to Honduras but generally a little more of the Guatemala like spicier flavors showing through. The Mexican coffees are dependably gently bright and clean flavored.
