Our “Origin Blend” is our exclusive in-house offering. It is comprised of 75% single origin beans and 25% of our proprietary blend for a more rounded-out cup, with well-balanced qualities. The single origin characteristics remain front and center in terms of cup taste notes, while the overall taste takes on the more “rounded-out cup qualities” of a well-crafted blend.

 

About the Roasting Process

Maybe you have heard that roasting coffee is a work of art and to achieve excellent beautiful taste development in coffee beans it requires skillful and calculated inputs by the roast master throughout the entire roasting process? Is this true or not… Let’s look at this topic a little deeper.

Some would argue that roasting coffee is easier than all that and you don’t need to worry about all those “technical aspects” to enjoy roasting your own coffee at home. In the most basic sense, you simply need to heat the beans to about 450*F or until they reach the desired “doneness” or “brown” and then cool them as quickly as possible with a fan to stop the internal roasting changes happening inside the beans. After this the coffee beans can be ground and used to brew coffee. It is as easy as that!

However, as you delve a little deeper into roasting your own beans you soon realize that there does seem to be a certain science or a required sequence of events behind the roasting process that must be met to achieve the best taste in the cup. You will learn that when the cup tastes grassy or underdeveloped that you must add more time and/or temperature to your roasting profile. You will also learn that sour notes come from too low of heat in your profile curve and that roasting too long gives a “flat” or “baked” tastes in the cup.

So how do you successfully navigate the roasting process. As the master roasters put it “it takes experience” and hours of input to learn “by trial and error”. Every roasting machine, heat probe, and methods are different so there is not a “one size fits all” answer. You will need to learn for yourself on your own machine what works best for you and then just run with it.

There are 3 main phases of the roasting process. 1). Beans change from green to “full yellow” before beginning to brown. 2) As beans begin to reach medium brown color, they begin emitting popping sounds like popcorn called “first crack”. At any point after the first crack the beans can now be cooled and used to brew coffee. 3) As the beans continue to darken past medium entering dark roast phase there is a “second crack” like the first crack. After this the bean surface becomes oily and very dark brown/black.

A good starting point for most home roasters is to use high heat inputs until after “the full yellow” milestone. After this gradually begin dialing back your heat at a constantly descending ROR (rate of rise per minute) until you reach “first crack”. After “first crack” is your development phase and continue lowering your ROR until you reach full development or your choice of doneness after this cool the bean with a fan to room temperature.

From here simply hone your craft. Roast and taste. Roast and taste. Make profile changes of “time and temperature” variations and continue to roast and taste. Repeat and make changes to your roasting profile as necessary. Sometimes it may seem daunting but stick with it and your hard work will pay off. Soon your home roasting will earn you praise and accolades from your friends and family when you share your fresh roasted coffee with them! And welcome to the world of coffee roasting!

 

About Choosing Your Roast Style

Here are general roast profile characteristics ranging from your lightest roasts to your darkest roasts to help you gauge your roast as it progresses through each stage of the process.

— 352 Cinnamon Roast – This option is a very lightly roasted coffee style that is dropped at the beginning of the first crack. It features a light aroma with a light body, the cup has an exceptionally light roast taste throughout. This style has become trendier in recent years, but it may be more of an acquired taste for many coffee drinkers that develops over time. This is because the light roast taste is so dominate in the cup. The bean surface is dry.

— 362 Light Roast – This is a more developed light roast style that is dropped towards the end of the first crack. Its acidity is bright, the body is more developed, a fruity sweetness is beginning to present itself, and the cup resonates with an awesome light roast taste. This style has developed a notorious following among coffee connoisseurs lately who desire that popular light roast taste. The bean surface is dry.

— 372 Blonde Roast – This roast features a balanced light/medium roast style that has become quite popular recently in the Northeastern states. Its bright, desirable fruit-like acidity, sweetness is more pronounced, the body is good, with an overall bright, fruity, it has a complex cup profile. The bean surface is dry.

— 382 Medium Roast – This style was once popular primarily in the Western states but now is found throughout the country. It is sometimes called a City Roast. This is a dry coffee with no surface oils. The aromatics are nearing their peak at this roast level and the cup is charged with complexity. The body is developing quite nicely, the acidity is not as bright or sharp as in the lighter roasts, easily making this our sweetest roast level for most beans. This style has become a highly favored sweetheart for many home roasters.

— 392 Full City Roast – This style is probably still the most typical for a large percentage of US coffee drinkers. It is a medium/dark roast with the bean surface being mostly dry with only a few droplets of surface oils beginning to form. The cup remains balanced, complex at this roast level and is sweeter than can be found at the very lightest roast levels or at the very darkest roast levels. The aroma is at its peak levels, body and mouthfeel are round and full, it provides an overall satisfying delicious cup with a nice, pronounced finish.

— 402 Espresso Roast – This may also be called Light French Roast. This is a dark roast style that refers to the degree of roast, it is dark brown in color with an oily surface. The advantage to this roast style is maximum body and texture, yet with a pleasant sweetness creating a balanced cup. Rich dark roast character is beginning to appear in the cup. Many coffees will roast well at this level and will remain complex. It is a popular choice for coffee lovers wanting a full-bodied chocolaty cup of coffee in a balanced way with a touch of natural sweetness remaining present.

— 412 Italian Roast – This is a style also known as French, Italian, or Turkish. It is a very dark brown oily style of coffee. Acidity is low, body is full, while there is still a sweetness present in the cup. Smoky undertones are beginning to appear in the cup. This style is quite common in the espresso culture and is that intense dark roast style that has been so prominent with many people in the recent coffee culture.

— 422 Heavy French Roast – This is a very dark brown style also called Dark French, Spanish, or Heavy Italian. The cup quality has changed dramatically, with burnt undertones masking the remaining cup attributes. The aroma, sweetness, and body are fading as the pungent smokiness dominates the cupping notes. It is a fact there is a definite following for this intensely strong style of very dark roasted coffee among U.S. coffee drinkers. Although many coffee purists will say the coffee is ruined because those delicate taste notes are missing in these very dark roasts. But if you are not into the delicate; rather the bold and brash then this will be perfect for you!

 

About Fresh Coffee Aromatics

As a home coffee roaster, you already know that your fresh roasted coffee tastes better than store bought roasted coffee. You will first notice the cup tastes alive, bursting with flavor with an unforgettable sweetness and balance throughout. This awesome balance and complexity in the cup are best enjoyed during the first 2-3 weeks from the time of roasting. The reason for this is the coffee is still alive with a huge number of aromatic compounds bringing excitement to the cup.

As time passes from time of roasting these lively aromatics slowly dissipate until you have the “usual supermarket coffee” taste in the cup. Home roasters will agree that fresh roasted coffee is simply the best and when you roast it yourself you are in full control of the roast profile and are free to make changes according to your own personal taste preferences.

 

About Specialty Grade Coffee Beans

Are coffee beans equal? The answer is a resounding no. There are huge differences in coffee beans even if they are from the same region or bordering farms. There are many reasons for these differences. Firstly, soil makeup and mineral content plays a huge role in coffee taste. Secondly, plant varietals contribute to molecular make-up of the beans which ultimately contributes to the taste in the cup. Thirdly, the weather during the growing season with its available rainfall for the plants to use and the seasonal temperatures all affect how the coffee cherries develop and their inherent flavor nuances.

When you taste our coffee, you will taste the difference that quality beans bring to the cup. All our beans are premium specialty grade beans with exceptional qualities in terms of their natural bean flavor nuances. About Coffee Processing Methods

What exactly are coffee people speaking of when they talk about processing methods in coffee? This term refers to what happens to the beans from the time they are picked as coffee cherries until the seeds “coffee beans” are fully dried and ready to export for coffee roasting.

— Natural processing is when the coffee cherries are harvested and then dried on patios with the entire cherry intact. After a specific time has passed the coffee beans are pulped-out via a wet mill pulping machine. They are then washed and dried to 11% moisture. With this processing the beans are fermented slightly while inside the cherry on the drying patios. This develops those more intense fruity flavors in the cup. The natural process is usually less acidic and bright tasting in comparison to a similar washed process version of the same coffee.

— Honey processing is the same as natural processing except the beans are initially pulped out of the cherry and then carefully dried with the sticky cherry residue intact. Like natural processing, honey processing also creates a fruitier profile in the beans but a less fruity intensity of ferment notes of the natural processing. Cup acidity is usually brighter than a similar natural process bean.

— Washed processing begins with picking the coffee cherries and then running them through the pulping machine to eliminate the cherry and skin. After this they go into a wash tank for a specific period usually 24-36 hours where the remaining cherry residue is washed off the beans. After this they are dried on the drying patios until 11% moisture. This processing results in a clean tasting cup. It is usually not as fruity. The acidity is usually higher, and the cup taste qualities are brighter.
