Peaberry coffees are rare, occurring only 5% or less in crops when only one bean inside the cherry develops, creating a much sought-after concentrated flavor. This coffee usually sells out quickly.     • This option is a very lightly roasted coffee style that is dropped at beginning of first crack. This is because the light roast taste is so dominate in the cup. Bean surface is dry.

    • This roast features a balanced light/medium roast style that has become quite popular recently beginning in the Northeastern states. Its bright, desirable fruit-like acidity, sweetness is more pronounced, the body is good, with an overall bright, fruity, it has a complex cup profile. Bean surface is dry.

    • Roast Profile Style – MEDIUM ROAST
    • This style was once popular primarily in the Western states but now is found throughout the country. It is sometimes called a City Roast. This is a dry coffee with no surface oils. The aromatics are nearing their peak at this roast level and the cup is charged with complexity. The body is developing quite nicely, the acidity is not as bright or sharp as in the lighter roasts, easily making this your sweetest roast level for most beans. This style has become a highly favored sweetheart roast for many home roasters today.

    • Roast Profile Style – FULL CITY ROAST
    • This style is probably still the most typical for a large percentage of US coffee drinkers. It is a medium/dark roast with the bean surface being mostly dry with only a few droplets of surface oils beginning to form. The cup remains balanced, complex at this roast level and is sweeter than can be found at the very lightest roast levels or at the very darkest roast levels. Aroma is at its peak levels, body and mouthfeel are round and full, it provides an overall satisfying delicious cup with a nice, pronounced finish.

    • Roast Profile Style – ESPRESSO ROAST
    • This may also be called Light French Roast. This is a dark roast style that refers to the degree of roast, it is dark brown in color with an oily surface. The advantage to this roast style is maximum body and texture, yet with a pleasant sweetness creating a balanced cup. Rich dark roast character is beginning to appear in the cup. Many coffees will roast well at this level and will remain complex. It is a popular choice for coffee lovers wanting that full-bodied chocolaty cup of coffee in a balanced way with a sweetness present.

    • Roast Profile Style – ITALIAN ROAST
    • This is a style also known as French, Italian, or Turkish. It is a very dark brown oily style of coffee. Acidity is low, body is full, while there is still a sweetness present in the cup. Smoky undertones are beginning to appear in the cup. This style is quite common in the espresso culture and is that intense dark roast style that has been so prominent with many people in the recent coffee culture.

    • Roast Profile Style – HEAVY FRENCH ROAST
    • This is a very dark brown style also called Dark French, Spanish, or Heavy Italian. The cup quality has changed dramatically, with burnt undertones masking remaining cup attributes. The aroma, sweetness, and body are fading as the pungent smokiness dominates the cupping notes. It is a fact there is a definite following for this intensely strong style of very dark roasted coffee among U.S. coffee drinkers. Although many coffee purists will say the coffee is ruined because those delicate taste notes are missing in these very dark roasts. But if you are not into the delicate; rather the bold and brash then this is perfect for you!

    • ROASTING PROFILES: Roasting coffee is a work of art because when you roast coffee beans to highlight those beautiful natural bean flavors that are hidden deep within the bean it requires skillful and calculated inputs throughout the entire roasting process. These precise and calculated inputs for excellent flavor development are called roasting profiles.

      COFFEE AROMATICS: When you taste fresh roasted coffee, you will first notice the cup tastes alive, bursting with flavor. These awesome aromatic flavors of rich complexity in the cup are because immediately after roasting the beans are loaded with many volatile aromatic compounds that taste so flavorful and delicious.

      DEVELOPMENT PROCESS: The process of arriving at these aromatic taste notes is quite complex and, in some ways, almost unexplainable. The molecular changes that must take place in a series of chain reaction during the roasting process will need to take place in a precise way because these chain reactions build on each other throughout the roasting process. It is the roasters job to navigate through these reactions in a razor thin margin by carefully modulating time and temperature to fully develop the coffees potential, so it shines beautifully in the cup.

    • CHOOSING YOUR ROAST STYLE IS ESSENTIAL!
    • THE ROASTING PROBLEM: You may have discovered the myriad of choices one must navigate through simply to choose which type of roaster to buy or what method will work best to roast your beans. Usually, a coffee roaster starts with a very economical method such as stove-top roasting or popcorn popper. This is a great way to start the learning process because it gives you valuable experience with minimal inputs in terms of expense. Also, the resulting tastes in the cup will give you a sense of success and courage to continue advancing down the roasting path.

      DEVELOPING YOUR STYLE: Most modern roasting enthusiast upstarts will wholeheartedly lean towards a certain style of development and cup qualities. Their style and tastes are distinctly reflected in the cup. It is easy to feel that this style is the only valid acceptable way to arrive at a roast conclusion for any set of beans.

      EXPANDING HORIZONS: As we all discover at some point there are various methods and ways to arrive at the epitome of cup qualities when roasting your own beans. You will discover that different beans simply like a different approach in roast profile. One profile for all beans simply does not work. Take a natural Ethiopian for example and a washed Sumatra; as any coffee roaster knows there is a vast spread of heat application needed between these two in order to develop that happy cup of coffee. Bean density and processing method play a huge role in determining the profile needed for specific beans. Once you understand the general profile that a particular bean will likely need, you have a starting point. It is best to roast a batch taste it, tweak the profile and roast again taste for improvements and then continue adjusting the profile as needed until the cup shines and makes you smile.

    • DOES FRESH ROASTED COFFEE REALLY TASTE BETTER?
    • AROMATIC COMPOUNDS: There is no doubt about it! It is a proven fact that coffee tastes so much better within the first 2 weeks after roasting. The reason for this is the coffee is still alive with a huge number of aromatic compounds that brings the excitement to the cup.

      DISAPPEARING AROMATICS: What happens to make the coffee not so exciting after the first couple weeks anyway? It is the fact that the natural oxidation process does double time during the first couple weeks after the roasting process has completed. At time of roasting the coffee beans are loaded with volatile aromatics that taste so good. These quickly begin disappearing as the oxidation process does its thing and soon it tastes like boring old supermarket coffee.

      FLAVOR TAKES FLIGHT: Help! …Can we stop this rapid oxidation process that happens after roasting? The answer is yes and no… It cannot be stopped but it can be slowed down by taking certain steps. Firstly, keep the coffee as whole bean and grind just prior to brewing. The reason for this is when the coffee is whole bean there is less surface area versus once its ground with many small surfaces. Secondly, keep the bag tightly closed and sealed in a cool dark area. Thirdly, keeping the beans in the freezer seems to help. Just be careful with condensation due to warmups when you take them out. In conclusion, it is best to keep your coffee as unroasted green beans and only roasting as needed because once they are roasted the natural bean flavors become volatile and will spoil much more quickly.

      DARK ROAST DILEMMA: Do you love those robust dark oily roasts? If you do then you probably have wondered why sometimes it tastes kind of bitterish and sharp. The reason for this is those surface oils on the dark roasts begin to go stale rather quickly after roasting and within 2-3 weeks after roasting those bitterish and sharp notes begin to make their appearance in the cup. Of course, if you do not mind the strong flavor this probably will not bother you a bit, and it may even taste better for some people. But if you want to enjoy those rich robust dark flavors along with the smooth creamy sweetness then you will want to drink it within the first couple weeks after roasting. Because of this, when roasting dark, it is imperative to only roast the beans as needed.

    • FRESH HARVEST BEANS: Are you looking for fresh coffee? Look no further, there is no question about it…. Our coffee beans are some of the freshest and best coffees available anywhere on the planet! Did you ask why is that? It is because we sell only premium current crop specialty grade coffees.

      CURRENT CROP: Coffee is a farm commodity that is grown and harvested once a year. It is considered current crop for the duration of the year following its harvest time until the next crop is harvested and becomes available; at that point it becomes past crop coffee.

      CURRENT CROP VERSUS PAST CROP: Unroasted green coffee that is stored in a well-controlled environment keeps reasonably well for first 9-12 months of its life after harvest. After this point it slowly becomes dull and progressively unexciting in the cup. It becomes what coffee people term as baggy tasting. And while it is true that certain beans will taste quite good for 24 months or even longer past current crop status, but this fact is unreliable and always varies from bean to bean and from year to year. For best results in the cup we recommend using only current crop beans whenever possible.

  • ARE ALL COFFEE BEANS EQUAL?
  • UNIQUE BEANS: Are coffee beans equal? The answer is a resounding no. There are huge differences in qualities of coffee beans even if they are from the same region or bordering farms. There are many reasons for these differences. Firstly, soil makeup and mineral content plays a huge roll in coffee taste. Secondly, plant varietals contribute to molecular make-up of the beans which ultimately contributes to the taste in the cup. Thirdly, the weather during any growing season with its available rainfall for the plants to use and the seasonal temperatures will all affect how the coffee cherries develop.

    COFFEE PROCESSING: What exactly are people speaking of when they talk about processing methods in coffee? This term typically refers to what happens to the beans from the time they are picked as coffee cherries until the seeds (coffee beans) are dried and ready to export.

    • NATURAL PROCESSING: Natural processing is when the coffee cherries are harvested and then dried on patios with the entire cherry intact. After a specific time has passed the coffee beans are pulped out via a wet mill pulping machine. They are then washed and dried to 11% moisture. With this processing the beans are fermented slightly while inside the cherry on the drying patios. This develops those more intense fruity flavors in the cup. The natural process is usually less acidic and bright tasting in comparison to a similar washed process version of the same coffee.
    • HONEY PROCESSING: Honey processing is the same as natural processing except the beans are initially pulped out of the cherry and then carefully dried with the sticky cherry residue intact. Like natural processing, honey processing also creates a fruitier profile in the beans but a less fruity intensity of ferment notes of the natural processing. Cup acidity is usually brighter than a similar natural process bean.
    • WASHED PROCESSING: The washed process begins with picking the coffee cherries and then running them through the pulping machine to eliminate the cherry and skin. After this they go into a wash tank for a specific period usually 24-36 hours where the remaining cherry residue is washed off the beans. After this they are dried on the drying patios until 11% moisture. This processing results in a clean tasting cup. It is usually not as fruity. The acidity is usually higher, and the cup taste qualities are brighter.
  • WHAT MAKES OUR COFFEE BEANS SO EXCEPTIONAL?
  • FARMERS EXPERTISE: Firstly, it is the capabilities of our farmer partners. Many of the coffee growers are two/three or more generation coffee farmers who have grown up farming coffee. They understand the ins and outs of coffee growing and how to overcome the many difficulties that present themselves on the coffee plants during the growing season. Take heart my friend… as with any new batch of beans, it often takes even experienced roasters several different roasts or profile tries to completely dial in your roasting machine/profile to where the cup really shines as you want it to at the cupping table.
